take a peek at the family behind Sweet Pea Photography...

Most of the time when I look through my viewfinder, I see someone else's family...  so this blog gives me a new reason/excuse/opportunity to pick up my camera and see the people I love most in this world... my family!  Thanks for joining me here - isn't the view beautiful?!

our paleo* adventure : day 30

Busy day again today, so no pics (although I really wanted to take a picture of tonight’s paleo pizza because it was so colorful!!… but it smelled so good, we dug right in and ate it before I remembered to get out the camera!!)

Breakfast : coffee, 1 egg with sausage, pineapple, 5 big strawberries

Lunch : water, egg salad made with cottage cheese and ham, broccoli and carrots with hummus, one blueberry-zucchini almond-flour muffin, applesauce, pineapple

Dinner : another delicious paleo pizza (topped with sausage, avocado, cheese, and leftover roasted peppers from last night – red, orange, yellow, green), water

Bedtime snack : a banana

One more day to go!!! Will we revert to our ice-cream-loving ways?? Wait and see…

Breakfast : coffee, 2 paleo blueberry-zucchini muffins

Lunch : water, 1 hard-boiled egg with cottage cheese and ham, 1 paleo blueberry-zucchini muffin, 1/2 apple, cashews

Dinner : spinach salad with grilled chicken, grilled peppers (green, red, orange, and yellow!), and avocado; milk (should’ve taken a picture of the salad – it was so colorful and tasty!!)

Bedtime snack : yogurt with blueberries and almonds, blueberry-pomegranate juice

First, some fun on the glider swing in the backyard… such a lovely day outside! And I love it when I can capture Averhy’s true smile… so often she “cheeses” for the camera… *sigh*

Breakfast : peach yogurt, blueberries, sliced almonds, coffee

Lunch : ham and bean soup, a banana, 1 cheese stick, water

Snack : dried apples and cashews

Dinner : Broiled Tilapia Parmesan, 1 baked sweet potato, spinach salad with feta, onions, olives, and balsamic vinegar; milk, 1 zucchini-blueberry almond-flour muffin

Bedtime snack : another muffin and a glass of milk

Breakfast : 1 grapefruit like yesterday, coffee

Lunch : leftover feta burger, egg salad made with cottage cheese, water, 2 sesame cookies

Snack : dried apricot, dried apples, cashews, water

Dinner : another taco salad leftover from last night (so yummy!), milk

It's just a bed of spinach topped with canned chicken I sauteed with taco seasonings (I just used some we had in the pantry - which probably wasn't completely paleo b/c it contained salt and sugar far down on the ingredient list... but you could probably use chili powder, black pepper, onion powder, and maybe cayenne pepper to season the meat?), tomatoes, cheese, avocados, green onions, and guacamole (made with avocados, green onion, lime juice, and cilantro). Enjoy!

April 29, 2010 - 12:56 pm James - Wow, is that salad really Paleo? That looks like something you would get from Taco Bell. Looks very tasty. Would you mind sharing the recipe? I'm always on the lookout for tasty Paleo recipes. It helps to have a lot of options, once I start running out of meal ideas, I start getting tempted to eat bad stuff. Looks like I'm having a Paleo salad for dinner tonight. LOL

Breakfast : one whole grapefruit (cut it in half, drizzle with honey and sprinkle cinnamon on top, broil in oven for 5 minutes = delicious!), a cup of blueberry-pomegranate juice, coffee

Lunch : one leftover Olive & Feta Burger, a cheese stick, 1 c. carrots with hummus, 3 sesame cookies, water

Dinner : taco salad (canned chicken and taco seasonings, spinach, tomatoes, cheese, avocados, green onions, guacamole), milk

Bedtime snack : 2 sesame cookies, milk

our paleo* adventure : day 25

Breakfast : Paleo Pancakes with fruit compote (blueberries, apples, bananas, yogurt), milk, coffee (delicious breakfast – thank you Sky!)

Lunch : Olive & Feta Burgers, fruit salad (pineapple, oranges, bananas, blueberries), carrots & broccoli with hummus, paleo garlic bread (recipe below – yummy!), 3 almond-flour chocolate chip cookies

Snack : 1 sesame-seed cookie (interesting flavor… kinda reminds me of peanut-butter cookies…)

Dinner : actually, I was still full from lunch, so I skipped dinner!

Bedtime snack : yogurt with blueberries, red raspberries, and sliced almonds; water

Paleo Garlic Bread

Crust:
2 cups almond flour
1/2 cup chopped walnuts
6 egg whites
2 Tbsp. minced garlic
1 Tbsp. oregano

Topping:
mozzarella
minced garlic
oregano
olive oil

Mix crust ingredients together and spread on cookie sheet. Bake at 350* for 10 minutes. Add toppings and broil until cheese is melted and starts to turn brown.
