our paleo* adventure : day 27

Breakfast : 1 grapefruit like yesterday, coffee

Lunch : leftover feta burger, egg salad made with cottage cheese, water, 2 sesame cookies

Snack : dried apricot, dried apples, cashews, water

Dinner : another taco salad leftover from last night (so yummy!), milk

April 30, 2010 - 9:08 pm Allyson - James - The salad is really easy! It's just a bed of spinach topped with canned chicken I sauteed with taco seasonings (I just used some we had in the pantry - which probably wasn't completely paleo b/c it contained salt and sugar far down on the ingredient list... but you could probably use chili powder, black pepper, onion powder, and maybe cayenne pepper to season the meat?), tomatoes, cheese, avocados, green onions, and guacamole (made with avocados, green onion, lime juice, and cilantro). Enjoy!

April 29, 2010 - 12:56 pm James - Wow, is that salad really Paleo? That looks like something you would get from Taco Bell. Looks very tasty. Would you mind sharing the recipe? I'm always on the lookout for tasty Paleo recipes. It helps to have a lot of options, once I start running out of meal ideas, I start getting tempted to eat bad stuff. Looks like I'm having a Paleo salad for dinner tonight. LOL
