our paleo* adventure : day 25

Breakfast : Paleo Pancakes with fruit compote (blueberries, apples, bananas, yogurt), milk, coffee (delicious breakfast – thank you Sky!)

Lunch : Olive & Feta Burgers, fruit salad (pineapple, oranges, bananas, blueberries), carrots & broccoli with hummus, paleo garlic bread (recipe below – yummy!), 3 almond-flour chocolate chip cookies

Snack : 1 sesame-seed cookie (interesting flavor… kinda reminds me of peanut-butter cookies…)

Dinner : actually, I was still full from lunch, so I skipped dinner!

Bedtime snack : yogurt with blueberries, red raspberries, and sliced almonds; water

Paleo Garlic Bread

Crust:
2 cups almond flour
1/2 cup chopped walnuts
6 egg whites
2 Tbsp. minced garlic
1 Tbsp. oregano

Topping:
mozzarella
minced garlic
oregano
olive oil

Mix crust ingredients together and spread on cookie sheet. Bake at 350* for 10 minutes. Add toppings and broil until cheese is melted and starts to turn brown.
