take a peek at the family behind Sweet Pea Photography...

Most of the time when I look through my viewfinder, I see someone else's family...  so this blog gives me a new reason/excuse/opportunity to pick up my camera and see the people I love most in this world... my family!  Thanks for joining me here - isn't the view beautiful?!

our paleo* adventure : day 10

Today was a super-busy day, and a good challenge to our paleo* plans… breakfast, Sky at the Mo all morning, trip to Books by the Bushel interrupted by a trip to convenient care (Eden has an ear infection… wish that would’ve showed up on Thursday at her 3 y.o. check-up and saved me $20…), post office, Averhy’s first soccer game (which was a ton of fun! Look at the intensity in her face!), switch vehicles so Sky could take the girls home for lunch, finally made it to Books by the Bushel to take some pictures and meet Olympic speed skater Jonathan Kuck, back home for lunch around 3pm, work outside in the yard, get supper ready for the girls, shower and dressed and go to a Provena charity event (eek! what would they serve to eat?), back home at 10:30, finish memorizing a monologue for a drama at church tomorrow, fall asleep reading my script… Whew!

Breakfast : 2-egg omelet with ham, cheese, fresh cilantro, and guacamole on top; coffee; blueberry-pomegranate juice

Lunch : leftover tilapia, cottage cheese, milk

Dinner : 2 glasses of wine, water, and enough hors d’oeuvres to be stuffed! (strawberries, sliced beef tenderloin, shrimp, broccoli and carrots with ranch dip, salmon with cream cheese, olive and cheese skewers, bacon-wrapped apricots and dates – YUM!) The dessert table looked delicious and tempting, but those bacon-wrapped dates were like a dessert by themselves!

our paleo* adventure : day 9

We’re only one week into this adventure, and I’ve been surprised at how many people have had questions for us… about the diet, how/why we’re doing this, how difficult or easy it is to do… so I thought I’d share whatever answers I can! (Feel free to leave a question/comment if you have one and I’ll try to answer it as we go…)  Friday is grocery shopping day, so I thought that would be a good place to start – just so you can see that we’re still buying lots of normal foods, and just eliminating the things that we don’t need!  Oh, and keep in mind that I shop for one week’s worth of meals, so this list might be shorter than you’re used to.  Weekly shopping isn’t my favorite (in the past I’ve tried to stretch it out as long as possible between trips to the store… 2, 3, 4 weeks if I’m really lucky) but with all the fresh fruit we’re eating, it’s necessary to go every week. So… today’s shopping list:

2 gallons of milk (1 skim, 1 whole)
half & half
sugar-free creamer
8 cups of light yogurt
18 eggs
2 lbs. butter
1 pkg. of 24 cheese sticks
4 c. pkg. of shredded colby-jack cheese
3 8oz. pkg. of cream cheese
1 pkg. bacon
1 pkg. lunch meat (sliced ham, chicken, or turkey usually)
1 jar green olives
ranch dressing mix
1 can cream of mushroom soup
1 pkg. broccoli
1 bag spinach
1 bag grapes
3 peaches
2 bunches of bananas
2 avocados
3 sweet potatoes
1 large onion
2 pkg. frozen berries (blueberries, raspberries)

I think that was about it for today, along with a few non-grocery items, and the total was right around $100. Usually I also include frozen chicken, fish, or other meat, as well as juice or other fruits and veggies… so you can keep an eye on my recipes over the next week and see these ingredients show up! Now, on to today’s menu…

family_blog040910

Breakfast : scrambled eggs (about 1.5 eggs and 1/2 c. chopped ham), cottage cheese, 5 strawberries, 1/2 banana, coffee (I tried but I just can’t do plain milk in coffee… gonna have to stick with sugar-free creamer)

Lunch : the rest of the leftover Ham Casserole, milk

Snack : a bunch of grapes

Dinner : Guacamole Cilantro Lime Cheeseburgers, broccoli and ranch dip (made with sour cream and powdered mix), water

Bedtime snack : yogurt, sliced almonds, 4 huge strawberries

our paleo* adventure : day 8

Breakfast : coffee (c’mon… you can’t tell me you never have a morning like that…)

Snack : a big bowl of sliced strawberries (yep, they’re still on sale so I picked up 3 more pints yesterday!!), pineapple chunks, and blueberries

Lunch : leftover Ham Casserole from last night, 1 c. cottage cheese, 3 BIG strawberries, a glass of milk, one brownie (unfortunately a little dry… I baked them for 25 mins, and probably should’ve only done 20 or 15 mins… oh well.)

Dinner : One of our favorite dishes — Broiled Tilapia Parmesan (1.5 filets), one baked sweet potato, 1 c. of sugar snap peas with hummus, milk

Bedtime snack : a cup of yogurt with almonds and blueberries (well, since I didn’t have it to start my day, might as well end the day with it!)

Broiled Tilapia Parmesan

1/2 c. parmesan
1/4 c. melted butter
3 Tbsp. mayo
2 Tbsp. lemon juice
1/4 tsp. basil
1/4 tsp. black pepper
1/8 tsp. onion powder
1/8 tsp. celery seed
2 lbs. tilapia fillets (about 8 filets)

Preheat oven to broil (500*) and line a shallow pan with foil. Broil fillets 2-3 mins. then turn over and broil 2-3 more mins. Mix all other ingredients together and then cover top side of each fillet. Broil about 5 more minutes until the topping is browned and melted.

Brownies

2 1/2 c. almond flour
1/2. c. cocoa powder
1/2 tsp. salt
2 tsp. cinnamon
1/4 c. agave nectar
1/4 c. honey
5 eggs
2 Tbsp. melted butter
1 Tbsp. vanilla extract
2 squares unsweetened chocolate, chopped

Mix dry ingredients together and mix wet ingredients together. Add dry to wet and mix well. Add half of the chopped unsweetened chocolate and stir. Pour into greased 9×13 pan and sprinkle remaining chopped unsweetened chocolate on top. Bake at 300* for 15-20 minutes.

our paleo* adventure : day 7

omelet_0002

Breakfast : an omelet (1 egg, cilantro, cheese, ham), 1 c. of blueberry-pomegranate juice, a cup of coffee with sugar-free creamer

Lunch : grilled pork and spinach salad with strawberries, oranges, avocado, grape tomatoes (Can you tell I often have leftovers for lunch? We had some of the fruit left over from last night, and it kept just fine in the fridge – yay!), milk, 3 cookies

Dinner : Ham Casserole, fruit salad (pineapple, strawberries, blueberries), milk, 1 cookie for dessert

Bedtime snack : 3 cookies and a glass of milk

Ham Casserole

2 c. cubed ham
2 c. frozen hash brown potatoes
1 can peas
3/4 c. milk
1/4 c. melted butter
2 Tbsp. almond flour
1/2 tsp. pepper
1/2 tsp. onion powder
1/4 tsp. salt
shredded cheese

Mix ham, potatoes, and peas in 9×9 dish. Mix other ingredients (except cheese) and pour over ham. Cover and bake at 350* for 30 minutes, then uncover and top with cheese. Bake 5 more minutes.  This turned out okay… could’ve used more seasoning (pepper) and thickening, but I’m not sure how to thicken without using regular flour… something to figure out…
