Today was a super-busy day, and a good challenge to our paleo* plans… breakfast, Sky at the Mo all morning, trip to Books by the Bushel interrupted by a trip to convenient care (Eden has an ear infection… wish that would’ve showed up on Thursday at her 3 y.o. check-up and saved me $20…), post office, Averhy’s first soccer game (which was a ton of fun! Look at the intensity in her face!), switch vehicles so Sky could take the girls home for lunch, finally made it to Books by the Bushel to take some pictures and meet Olympic speed skater Jonathan Kuck, back home for lunch around 3pm, work outside in the yard, get supper ready for the girls, shower and dressed and go to a Provena charity event (eek! what would they serve to eat?), back home at 10:30, finish memorizing a monologue for a drama at church tomorrow, fall asleep reading my script… Whew!
Breakfast : 2-egg omelet with ham, cheese, fresh cilantro, and guacamole on top; coffee; blueberry-pomegranate juice
Lunch : leftover tilapia, cottage cheese, milk
Dinner : 2 glasses of wine, water, and enough hors d’oeuvres to be stuffed! (strawberries, sliced beef tenderloin, shrimp, broccoli and carrots with ranch dip, salmon with cream cheese, olive and cheese skewers, bacon-wrapped apricots and dates – YUM!) The dessert table looked delicious and tempting, but those bacon-wrapped dates were like a dessert by themselves!
