Breakfast : coffee (c’mon… you can’t tell me you never have a morning like that…)
Snack : a big bowl of sliced strawberries (yep, they’re still on sale so I picked up 3 more pints yesterday!!), pineapple chunks, and blueberries
Lunch : leftover Ham Casserole from last night, 1 c. cottage cheese, 3 BIG strawberries, a glass of milk, one brownie (unfortunately a little dry… I baked them for 25 mins, and probably should’ve only done 20 or 15 mins… oh well.)
Dinner : One of our favorite dishes — Broiled Tilapia Parmesan (1.5 filets), one baked sweet potato, 1 c. of sugar snap peas with hummus, milk
Bedtime snack : a cup of yogurt with almonds and blueberries (well, since I didn’t have it to start my day, might as well end the day with it!)
Broiled Tilapia Parmesan
1/2 c. parmesan
1/4 c. melted butter
3 Tbsp. mayo
2 Tbsp. lemon juice
1/4 tsp. basil
1/4 tsp. black pepper
1/8 tsp. onion powder
1/8 tsp. celery seed
2 lbs. tilapia fillets (about 8 filets)
Preheat oven to broil (500*) and line a shallow pan with foil. Broil fillets 2-3 mins. then turn over and broil 2-3 more mins. Mix all other ingredients together and then cover top side of each fillet. Broil about 5 more minutes until the topping is browned and melted.
Brownies
2 1/2 c. almond flour
1/2. c. cocoa powder
1/2 tsp. salt
2 tsp. cinnamon
1/4 c. agave nectar
1/4 c. honey
5 eggs
2 Tbsp. melted butter
1 Tbsp. vanilla extract
2 squares unsweetened chocolate, chopped
Mix dry ingredients together and mix wet ingredients together. Add dry to wet and mix well. Add half of the chopped unsweetened chocolate and stir. Pour into greased 9×13 pan and sprinkle remaining chopped unsweetened chocolate on top. Bake at 300* for 15-20 minutes.
