Breakfast : Activia yogurt with strawberries, blueberries, and shaved almonds; a cup of coffee.
Lunch : Pork chop with 2 slices of provolone cheese, a cutie, water.
Snack : 5 big strawberries and 2 of these tasty chocolate chip cookies!! (I used 100% unsweetened shaved cocoa instead of 75% listed in the recipe.)
Dinner : Apple-ham-sweet-potato bake, milk, and 2 more cookies for dessert.
Bedtime snack : you guessed it… milk and 3 more cookies!!
Apple-Ham-Sweet-Potato bake
4 small granny smith apples, cored, skinned, and sliced
1 large sweet potato
1 c. cubed ham
1 Tbsp butter
1/3 c. water
1/2 tsp. marjoram
3 tsp. lemon juice
1/4 tsp. onion powder
Microwave sweet potato for 5 minutes to get it soft, then skin and slice into 1/2″ thick pieces. Spread apple slices on bottom of 9×9 pan, then a layer of ham, then a layer of sweet potatoes. Melt butter and mix with water, marjoram, and onion powder; pour over sweet potatoes. Bake at 350* for 30 min. This turned out pretty good, and we ate it in a bowl like stew. Serves 3.
