I knew today would be a challenge, between serving at church all morning for Easter services (where our usual breakfast is a donut) and lots of Easter candy around the house from our annual Easter egg hunt in the afternoon… but I think we did pretty well!
Breakfast : another zucchini-blueberry muffin, a banana, apple juice, and a small cup of coffee
Lunch : ham, green beans with bacon (yummmmm….), fruit salad, bean salad, 2 deviled eggs, baked shredded potatoes with cheese, and water (all prepared and served by our wonderful friends at Dick and Lynne Barnes’ house — thank you!! It was pretty tough resisting all the pies after lunch, but we did!)
Dinner : tasty Strawberry-Avocado-Pork salad (using up the grilled pork from last night), water.
Bedtime snack : a glass of pomegranate-blueberry juice.
Here’s the recipe for the delicious salad:
Strawberry-Avocado-Pork salad
Spinach
1 pint strawberries
1 avocado, cubed
2 c. cubed grilled pork
sliced almonds
dressing — simply mix the following:
1 tsp. agave nectar
1/4 c. olive oil
2 Tbsp. honey
2 Tbsp. cider vinegar
2 tsp. lemon juice
2 Tbsp. mayo
1/2 tsp. balsamic vinegar
a pinch of poppyseeds
