Breakfast : ham & cheese omelets (first time I’ve made an omelet in years, and they turned out great!), milk, coffee
Lunch : strawberries, cottage cheese, grapes, milk, and these delicious zucchini-blueberry muffins — adapted from one of my favorite recipes. So the no-sugar, no-grain recipe is as follows:
Zucchini-Blueberry Muffins
3 eggs
1/2 c. canola oil
1/2 c. applesauce
3 tsp. vanilla
1 c. agave nectar
2 c. shredded zucchini
2 c. almond flour
1 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
1 Tbsp. cinnamon
1 c. blueberries
Mix all ingredients and bake at 350* for 25 minutes (muffins) or 45 minutes (loaf)
Snack : a few orange slices, quickly between Easter services at church…
Dinner : Awesome Pork Salad with Summer Fruit, more Zucchini-Blueberry bread, and a glass of white wine. Oh, and about 1/2 c. of egg salad that Eden didn’t want to eat with her supper! But the best part of dinner was hanging out with some fun friends from Momentum gym — fondly dubbed the “Mo Joes” — thanks for a fun evening guys!
