{"id":473,"date":"2010-04-18T20:10:24","date_gmt":"2010-04-19T01:10:24","guid":{"rendered":"http:\/\/sweet-pea-photography.com\/familyblog\/?p=473"},"modified":"2010-04-18T20:10:24","modified_gmt":"2010-04-19T01:10:24","slug":"our-paleo-adventure-day-18","status":"publish","type":"post","link":"http:\/\/sweet-pea-photography.com\/familyblog\/?p=473","title":{"rendered":"our paleo* adventure : day 18"},"content":{"rendered":"<p style=\"text-align: center;\">Guess what we got to eat today????<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-482\" title=\"family_blog041810_1\" src=\"http:\/\/sweet-pea-photography.com\/familyblog\/wp-content\/uploads\/2010\/04\/family_blog041810_1.jpg\" alt=\"family_blog041810_1\" width=\"900\" height=\"450\" srcset=\"http:\/\/sweet-pea-photography.com\/familyblog\/wp-content\/uploads\/2010\/04\/family_blog041810_1.jpg 900w, http:\/\/sweet-pea-photography.com\/familyblog\/wp-content\/uploads\/2010\/04\/family_blog041810_1-300x150.jpg 300w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/p>\n<p>Sundays are always busy days for us, since we&#8217;re usually serving at church services in the morning (Sky playing guitar in praise band, and Allyson singing or doing dramas), so breakfasts usually fall by the wayside&#8230; especially because the main breakfasty-item at church is donuts&#8230;But that just means that we try to make up for that weak meal with a super-tasty lunch and supper!<\/p>\n<p>Breakfast : 1\/2 apple, yogurt, coffee, water<\/p>\n<p>Lunch : <a href=\"http:\/\/www.elanaspantry.com\/mustard-lime-chicken\/\">Mustard-Lime Chicken<\/a> and grilled avocados (delicious!), fruit salad (strawberries, bananas, grapes, kiwi, peach yogurt, and sliced almonds), a handful of broccoli with hummus, water<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-483\" title=\"family_blog041810_2\" src=\"http:\/\/sweet-pea-photography.com\/familyblog\/wp-content\/uploads\/2010\/04\/family_blog041810_2.jpg\" alt=\"family_blog041810_2\" width=\"900\" height=\"599\" srcset=\"http:\/\/sweet-pea-photography.com\/familyblog\/wp-content\/uploads\/2010\/04\/family_blog041810_2.jpg 900w, http:\/\/sweet-pea-photography.com\/familyblog\/wp-content\/uploads\/2010\/04\/family_blog041810_2-300x199.jpg 300w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-484\" title=\"family_blog041810_3\" src=\"http:\/\/sweet-pea-photography.com\/familyblog\/wp-content\/uploads\/2010\/04\/family_blog041810_3.jpg\" alt=\"family_blog041810_3\" width=\"900\" height=\"601\" srcset=\"http:\/\/sweet-pea-photography.com\/familyblog\/wp-content\/uploads\/2010\/04\/family_blog041810_3.jpg 900w, http:\/\/sweet-pea-photography.com\/familyblog\/wp-content\/uploads\/2010\/04\/family_blog041810_3-300x200.jpg 300w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/p>\n<p>Snack : a glass of water and two mini Apricot-Lemon muffins (my recipe is below, and it&#8217;s based on<a href=\"http:\/\/www.elanaspantry.com\/cranberry-lemon-muffins\/\"> this recipe from elanaspantry.com<\/a> &#8212; I didn&#8217;t want to use cranberries because they only ones we had in the house were Craisins, which are loaded with sugar)&#8230; and I also licked the delicious batter off the spoon, and bowl, and mixer from these super-yummy Sunflower-Seed-Butter Brownies (again, recipe is below, based on <a href=\"http:\/\/www.elanaspantry.com\/brownies\/\">this recipe from elanaspantry.com<\/a>)<\/p>\n<p>Dinner : milk, spinach salad with feta and balsamic vinegar, and AWESOME Paleo Pizza (recipe below is from <a href=\"http:\/\/crossfitchron.blogspot.com\/2010\/01\/paleo-pizza-on-menu-tonight.html\">CrossFitChron.blogspot.com<\/a>, with our adjustments&#8230; and it is FANTASTIC!! Way better than anything you can buy at the store, and probably even better than our usual homemade wheat-crust pizza.\u00a0 The crust was perfect &#8211; just the right amount of crunch &#8211; and I wanted to have a third slice, but decided against it because I&#8217;m going to go to <a href=\"http:\/\/momentumgym.com\">the Mo<\/a> tonight!)<\/p>\n<p>Bedtime snack : will probably be a Sun-butter brownie and a glass of milk!<\/p>\n<p><strong>Apricot-Lemon muffins<\/strong><\/p>\n<p>2 cups blanched almond flour<br \/>\n\u00bd teaspoon celtic sea salt<br \/>\n1 teaspoon baking soda<br \/>\n1 cup dried apricots, chopped<br \/>\n\u00bd cup melted butter<br \/>\n3 eggs<br \/>\n1\/4 cup agave nectar<br \/>\n1\/4 cup honey<br \/>\n2 Tbsp. lemon juice<\/p>\n<p>Mix dry ingredients together, including apricots. Mix wet ingredients together and add to dry ingredients. Bake at 350* for 25-30 minutes. Makes 12 muffins.<\/p>\n<p><strong>Sunflower Butter Brownies<\/strong><\/p>\n<p>1 (16) ounce jar Trader Joe&#8217;s sunflower seed butter<br \/>\n2 eggs<br \/>\n1 cup agave nectar<br \/>\n1\/4 cup honey<br \/>\n1 tablespoon vanilla extract<br \/>\n\u00bd cup cocoa powder<br \/>\n\u00bd teaspoon celtic sea salt<br \/>\n1 teaspoon baking soda<br \/>\n2 squares baking chocolate (unsweetened cocoa)<\/p>\n<p>Mix sun butter, agave, honey, vanilla, eggs. Mix together cocoa powder, sea salt, and baking soda; add to wet mixture.  Chop up baking chocolate and fold into batter. Spread batter in greased 9&#215;13 pan (it will be REALLY thick). Bake at 325* for 35-40 mins. (or I put them in the oven after I made the muffins, and it was still around 350*&#8230; so I just baked them for 25 mins.)<\/p>\n<p><strong>Paleo Pizza<\/strong><\/p>\n<p><span style=\"text-decoration: underline;\">Crust<\/span>:<br \/>\n1 cup almond flour<br \/>\n1\/4 cup chopped pecans<br \/>\n3 egg whites<\/p>\n<p><span style=\"text-decoration: underline;\">Sauce<\/span>:<br \/>\n1 small can tomato paste<br \/>\n1 Tbsp. olive oil<br \/>\nOregano and garlic salt to taste<\/p>\n<p><span style=\"text-decoration: underline;\">Toppings<\/span>:<br \/>\nItalian sausage<br \/>\nGreen olives<br \/>\nCalamata olives<br \/>\nGrilled chicken<br \/>\nProvolone cheese (we were out of mozzarella)<br \/>\nOregano and Garlic salt to taste<\/p>\n<p>Mix together crust ingredients and spread on a cookie sheet, about 1\/4 inch thick. Bake at 350* for 10 minutes.
